Not just your typical ‘2-ingredient pancake’ over here.
SKINNY.MINI.ANXIETY.SOOTHING.WAFFLES. I feel like those words are just meant to be together, no? Ah. Reducing anxiety at the start of the day, just how I like it! And who doesn’t love good-for-you mini waffles that are super easy to make?
Especially if you deliver them in bed as I did in the pictures. Then you’re just bound to be on your boyfriends good list, trust me.
I’m not one to be in the kitchen all day long, so anything that makes my cooking life easier (like waffle makers) is staying. This mini waffle maker is THE BEST. I got it at Urban Outfitters, but you can one here, here, or here if they are sold out or you want to get the perfect color (I got you).
I love it because well, uh one: it cooks for you. No flipping or making a mess. This tiny goddess has got it all figured out. And well, two: it takes about 1 minute tops to cook these bad boys. And the little light on top will go off to let you know.. YUP. And of course, duh, it’s mini so it’s quick to clean and small enough to be put away easily.
THAT is something, huh?
So I made ANXIETY SOOTHING waffles in my new toy, which I have actually made in pancake form without the anxiety soothing part. They are super simple and healthy. 2 main ingredients – banana and eggs. You’ve heard of them before, they were all the rage for awhile (are they still?). For very good reasons.
This time though, we are spicing it up and reducing your anxiety while we’re at it.
Remember when I wrote about adaptogens and why you should be using them? They are MAJOR. I’ve been adding them to anything and everything.
And waffles brings me back to childhood, you know?
Pancakes are cool, but waffles are just cooler. They’re like no school, Saturday morning, cartoon watching type of good.
But of course, we need to do it healthy, skinny style and add some extra adaptogen love. This isn’t some NYC cheat-day brunch, but it feels like it. Trust me.
LET’S MAKE WAFFLES.
WHAT YOU’LL NEED:
+ 1 banana
+ 2 eggs
+ ashwagandha powder (for anxiety soothing!)
+ cinnamon (if wanted)
+ vanilla extract (if wanted)
HOW TO MAKE THEM:
+ plug your mini waffle maker in while preparing your batter
+ mix your eggs and mashed up banana together (I actually used a frozen banana because it’s all I had. I just heated it up for 1 minute in the microwave and mashed it – worked fine!)
+ add in the ashwagandha powder, cinnamon and vanilla and mix well
+ spray your mini waffle maker with coconut oil spray (or another spray you have)
+ pour the batter into the waffle maker – not too much because it will overflow!!! close the waffle maker and let it cook for about 1 minute – the light should go off when it’s done
I MEAN SERIOUSLY?
How easy is that? I made them for BA and he didn’t even question that there was any type of adaptogen in there (ashwagandha) which he normally would – he’s so nosey like that (sorry). HA.
FOR TOPPINGS : get creative! I used heated up blueberries so they almost turn into a syrup, plus some coconut nectar. I like to put out some options to choose from, so I added unsweetened coconut this time and BA used dark chocolate chips. Feel free to spice it up however you want!
The perfect way to get some adaptogens into your system, and your kids or hubbies or boyfriends without them being picky about it!
