I have this thing for smoothies – if you were a CIC reader (old blog) you know this. I OBSESS over a good smoothie anytime of the day. They are one of my top go-to meals because they’re so quick and they really get the job done with filling me up.
I’m not a huge eater – I like to pick throughout the day instead of having huge ass meals. That’s how smoothies really made there move on me, the whole fill-me-up without having to eat a huge meal type of thing.
And of course, let’s not pretend we hate it, acai bowls are all the rage. Putting your smoothie in a pretty bowl with toppings to add some extra oomph really takes the whole picture game up a notch. I know, we aren’t here to take pictures of our food. We are here to eat. I get it. But who doesn’t love a snap of a pretty acai or smoothie bowl?
SO – naturally, I’ve been making smoothies and bowls almost every day. I usually go for the morning, but lately I’ve been loving a lunch bowl. (Or my fruit bowls – mhm!) I don’t always have acai in my house, so don’t stress, you don’t need it to make the bowl. I just make a smoothie like I normally would, but I use less almond milk or water. I make it thicker so that it is super ice creamy-ish and you can eat it from the bowl instead of drinking it.
And adding toppings is just fun, honestly. I like to add cinnamon and unsweetened coconut to almost all of my bowls. Fruit is mixed up from bowl to bowl, and cocoa nibs are a ULTIMATE yes because the crunch it gives your bowl is just to die for.
BOMB SMOOTHIE BOWL TIPS :
+ keep frozen fruit in your freezer at ALL TIMES!
+ cut up bananas and put them in baggies in your freezer – amazing ice cream texture!
+ drizzle honey on-top for some sweetness
+ use the large nutribullet blending cup and pack it in!!!
This specific smoothie bowl had :
+ 1/2 frozen banana
+ handful of frozen mango
+ 1 frozen strawberry (don’t ask)
+ handful of ice
+ about 1/2 cup of almond milk (added some water when it wasn’t blending well)
+ splash of vanilla extract
+ 1 scoop of raw fiber
+ 1 scoop of vanilla protein powder
+ 1 scoop of collagen
(had no acai – still comes out so good!)
ON TOP :
+ mango, cacao nibs, unsweetened coconut, cinnamon, blueberries
