There’s something about quick and easy recipes that JUST GET ME.
I’m all about baking, I love it. Cooking? Eh, not so much. I like to, but it isn’t my favorite. I’m more of a simple, quick and easy meal kind of girl. I actually tried to follow a Pinterest recipe on pumpkin soup and I’m not too sure where I went wrong but I had to throw the entire crockpot of soup out. It was BAD. In a crockpot!!! (HUGE sigh).
Baking I would do all Sunday long. But, the thing is, I don’t like to bake things that take me fifty years and add on an anxiety attack. You know? Those recipes that call for a million and one ingredients and take five hours to make plus they don’t rise right no matter what you do? I hate those kind. Honestly, I’m kind of just lazy when it comes to all of that.

This cake was totally inspired by The Skinny Confidential – she made a fake cake for Thanksgiving and I’ll never get over it. When I saw it (I think last year?) I was like YUP – that’s it. Done.
You probably know this if your read KXC but for the holidays I LOVE to bring the dessert, clearly. I’m all about it. I become America’s Best Lazy Baker and go full speed in the kitchen.
Plus, a pretty dessert NEVER HURT ANYONE.

This cake is a two second prep, 30 minute baking time, and about 10 minute decoration time. Count.me.in. Ok, ready? It’s from a box. Yes, the best boxed cake you’ll ever have. The prettiest boxed bake you’ll ever make. YUP YUP.

Here’s the ingredients in the cake mix, incase that wasn’t enough :
ORGANIC COCONUT SUGAR
ORGANIC COCONUT FLOUR
That’s it. I mean, COME ON.
Perfect to whip up before you head over to Thanksgiving, right? Or any holiday/party, really.
I used real flowers from Whole Foods (got all my ingredients in one stop – BOOM) but you can use any or even fake ones if you feel better doing that. Just rinse the stems, cut them super short and stick them right on into the cake when you’re all done frosting.
So simple, so quick, and so pretty. For my best lazy bakers out there.
WHAT TO DO :
+ Follow instructions on cake mix (I added nutmeg for some spice and flavor)
+ Bake, frost and decorate
(You can also get two boxes and two frostings, then make a layered cake if you’re feeling, um… not lazy, you know?)
